Tasty Tuesday ~ Pina Colada Popsicles from @FoodSnobSTL


Hi everyone! It's Laura from Food Snob St. Louis with another great summer recipe for you!

He hates to admit it, but the Food Snob loves a good piña colada. Who can blame him? Fresh pineapple, coconut milk, and rum make this classic tropical treat . . . only in popsicle form. I am not sure what it is about boozy popsicles. Perhaps it is the allure of eating a childhood treat with an adult twist? Or maybe you don't feel as guilty about your day drinking if if comes frozen on a stick. Whatever the case might be, I knew our recent weekend at the lake required some boozy piña colada popsicles for our afternoons in the sun.

  

One thing I really dislike about most piña coladas is the mix used is full of corn syrup.
These popicles are more naturally sweetened by the fresh pineapple and coconut milk. I also love the creaminess that the coconut milk adds to the popsicles. They make a perfect refreshing afternoon treat for your next weekend or  vacation.
