Tasty Tuesday ~ Roasted Acorn Squash and Apples via @FoodSnobSTL

I know Whitney has been busy with tons of great Christmas giveaways, but let's talk about Thanksgiving today for Tasty Tuesdays. With a little over a week before the big day, I am sure many of you are getting ready to tackle the grocery store. Before you go, may I suggest adding this recipe to your Thanksgiving menu?

Some people like to completely indulge on Thanksgiving. Some people prefer to make it a bit more healthy. I think a balanced approach is best. I like to indulge, but hate feeling overly blarge. So with pie and stuffing and buttery rolls galore, I think it's best to toss in some healthy sides to create balance.

Acorn squash is nature's candy. It honestly needs to seasoning or sugar. When roasted, it gets a crisp caramelized exterior that tastes like it's been bathed in brown sugar. When acorn squash is combined with roasted apples, the natural sugar from the fruit intensifies the sweetness. It is like a pan full of apple cider, candy autumn goodness - all with no added oil/fat or sugar.

Head on over to Food Snob St. Louis today for the full recipe. I'll also be posting a recipe round-up later this week for more healthy Thanksgiving side dishes!
