Acorn squash is nature's candy. It honestly needs to seasoning or sugar. When roasted, it gets a crisp caramelized exterior that tastes like it's been bathed in brown sugar. When acorn squash is combined with roasted apples, the natural sugar from the fruit intensifies the sweetness. It is like a pan full of apple cider, candy autumn goodness - all with no added oil/fat or sugar.
Head on over to Food Snob St. Louis today for the full recipe. I'll also be posting a recipe round-up later this week for more healthy Thanksgiving side dishes!
