Christmas is just around the corner, and I've got a quick, easy and healthy side dish that you can serve your family on those days when you've been busy baking and shopping all day.
Edamame are green soybeans that look very similar to sugar snap peas in the pod. You don't eat the pods of edamame, but shell them and eat the inner beans. On of the great things about edamame are that they are packed with protein. I usually use them in stir fry dishes, so this was a new way for me to try them as a side dish. They have a slightly sweet flavor, that only needs the simplicity of a little olive oil, salt, pepper and freshly grated Parmesan cheese to make them a perfect side dish for any meal.
