We are officially back on track with Tasty Tuesdays posts, and I'm thrilled to share this pancake recipe with you guys! I made these Lemon Curd and Blueberry Cornmeal Pancakes for brunch on New Year's Day, but they would be great on any morning or even for dinner sometime.
Even if you don't normally like lemon dishes, you should give these lemon curd cornmeal pancakes a try. The Meyer Lemons give a subtle, sweet lemon flavor that isn't overpowering. Corn meal adds a rustic quality with a little bit thicker consistency.
