These beauties from Frieda's Produce have a denser flesh that isn't quite as sweet as their orange counterparts. Man, are they beautiful though. The dark purple flesh reminds me of beets, and it can stain your hands or clothes just like beets (learned that one the hard way).
I was originally going to use these to make purple sweet potato gnocchi. I had baked them earlier in the day, since it takes 1-2 hours, put Baby Snob to sleep, pulled out the recipe I was going to use only to figure out that it was going to take 2-3 hours from start to finish rookie mistake!!). When you start dinner at 7:30 p.m. and are in bed by 9:30 p.m., a 2-3 hour timeline doesn't work. So, I scraped that idea and just made pancakes for Baby Snob and I in the morning instead. I had a pound of ricotta cheese to make the gnocchi, so rather than let is waste away in there, I layered it with a drizzle of maple syrup on every pancake. All pancakes should be stuffed with ricotta cheese - every.last.one.
